SPOILER ALERT Wife was so proud of her spare ribs. They’re spoiled.

I was called into the kitchen after she finished lovingly preparing our spare ribs for dinner.

She’s showing me the before picture to the big trimmed reveal, super proud of herself.

“Yeah, the whole time I was messing with it, it smelled like fish. Super gross. Anyway,”

Lmao dude wait, what?

Any sane person would’ve at least got a second opinion lol. She’s the sweetest and I’m grateful I didn’t have to cook, but I’m a chef and you didn’t think to ask me?

All I smell is the rub, but we’re obviously throwing this out and getting some COOKED spare ribs elsewhere tonight. At least she tried!

Additional info:

It’s within the sell by date and we just bought it today. I’ll be getting a refund later today with my receipt.

I know pork sometimes can have an off-smell straight out of the bag, but if it lingers the way my wife described, then your pork has most likely gone off.

Not worth the risk to consume it, we have a trip in a couple days!

My MIL constantly prepares spoiled food. She has gotten her husband sick multiple times. She fed him homemade ice cream she made with cottage cheese that expired 6 months prior.

u/Capt_Hawkeye_Pierce 1d ago

Nothing about that second sentence is even remotely okay.

No shit. Cottage cheese ice cream?

1.7k

u/Centaurious 1d ago

https://www.eatingbirdfood.com/cottage-cheese-ice-cream

apparently it’s very high protein. it doesn’t seem to specify needing it to be 6 months expired, though

u/SymmetricDickNipples 1d ago

That's a wild name for a cooking site

Yeah lmao it was the first result on google so no clue what her deal is

My guess (without having looked at it) is that it's recipes for ppl who are dieting... "Eating like a bird" like just little bits at a time, I think is the phrase? I went on a pretty extreme diet for a physique contest in 2024 and yeahhhh it was cottage cheese left and right. 🤣I don't miss it!

54

u/OpportunityReal2767 1d ago

It’s pretty clever and memorable. I assume it’s a diet site of some sort, as “eating bird food” is how some people who enjoy their meat disparage salad, or other diet food.

47

u/Tater-Tot-Casserole 1d ago

This reminds me of an Episode of Frasier where he and his friends starved themselves for a weightloss contest. Someone spilled a bag of bird seed on the floor and they all dove for it to eat it.

11

u/Meghan1230 1d ago

And he thought Kenny ate the bird. Lol

I thought “rabbit food” was the term.

16

u/Different-Bid-6737 1d ago

rabbit food is lots of greens and bird food is seeds/nuts, both terms are used just in different contexts

It's awful! Poor husband needs to put.his foot down, before she accidently poisons him...again.

I would be extremely wary of her food, after the 2nd/3rd time. It's not doing anyone any favours, by not saying anything, she needs to know. She's the problem! I'm guessing she won't listen, though. I have a very stubborn Mother, myself...except she almost burns her chicken, because she's scared of food poisoning 😆

My Mum and your MIL are at opposite ends of an odd spectrum.

71

u/United_News3779 1d ago

before she accidently poisons him...again.

I think the revised version of that sentence shifts the emphasis in a more appropriate direction lol

I think your FIL should read some old spy novels:

Once is happenstance.
Twice is coincidence.
Three times is enemy action. * Auric Goldfinger, in the James Bond novel Goldfinger by Ian Fleming (1959)

I think the MIL is well past the enemy action descriptor and into the "sustained campaign of biological warfare" stage lol

I already had issues with my sense of smell before, but after COVID, my ability to detect sour odors never returned - spoiled milk, vegetables, or bread all smell completely normal to me. I often end up throwing away food that might actually be perfectly fine, simply because I have no way of knowing whether it’s still safe to eat

Some people are just like that? My mom is the exact same way and it’s fucking gross. I check the dates on everything she cooks with unless I literally saw her bring it home that day

It’s funny how many times she screamed at me that I was being mean or crazy then I flip over the package of what she was about to use and it was months out of date. Sometimes years if we’re talking condiments

30

u/WesternPeak425 1d ago

My mother in law used to consume and offer expired food. She thought I was vegetarian for years (I’m not), I just didn’t trust any meat or anything really.
She would leave left overs on her counter for days in her warm kitchen and make sandwiches etc with it. She did get ill every now and then but it couldn’t possibly have been food poisoning apparently.

I worked with a guy who "didn't believe in refrigeration". He said "I just use it all before it goes bad". This is for milk, jelly, pretty much anything you can think of you'd typically refrigerate. He would regularly complain about how his son was sick all the time 😩 .

407

u/BarnyTrubble 1d ago

Of all the idiotic claims I've heard from stupid coworkers "I don't believe in refrigeration" has to take the cake. My boss is one of those types that uses beef tallow instead of sunscreen and complains every Monday about his sunburn from his weekend fishing trip while trying to convince me to take ivermectin to cure my ADHD, but your coworker sounds even more insufferable somehow.

I feel like I could write a memoir about that place. One day, I came into the office, I sit down, I look over, he's already at his desk. He opens a drawer, pulls out a slice of pizza on a plate and begins eating it, I was like "dude there's no way that's safe", and he refused to believe leaving a slice of pizza in a drawer for... 16ish hours... was unsafe to eat.

I was at that job for 3 years and that dude wasn't even the weirdest person there, it felt like some bizarro shitty version of The Office except people were really mean to each other.

48

u/saturday_sun4 1d ago

Also, who leaves pizza in their office drawer (or any drawer but especially their office drawer?)

my boyfriend’s dad only believed in working out and taking a monthly dose of ivermectin to ward off any health issues. He said he injected himself every month, while he didn’t notice any differences good or bad, he believed it couldn’t hurt. He very unexpectedly passed away at 61 a few months ago. Likely as a result of unchecked and unmedicated high blood pressure.

My boyfriend made the notification to his dad’s family and friends. After the initial shock of it all, about half of them asked if he got the Covid shot. Like the guy dosing himself with ivermectin and otherwise not believing in doctors would ever fathom getting ‘the jab.’ Was all really disappointing for me as I am otherwise never around people that have those sorts of views and I am a published research microbiologist.

how his son was sick all the time

That is really sad. Hope things improved for the kid, or he at least learned be cautious of food prepared by his father.

45

u/SandyTaintSweat 1d ago

It was the same for me. My dad believes in refrigeration, but he doesn't seem to understand or believe in anything he can't see. So he'll buy the food that's on sale because it goes bad the next day, and he'll buy a lot too. So he gets it half off, but most of it spoils and he just eats it anyways and tries to serve it to others too. It kind of forced me to adopt a primarily vegetarian diet, since it's far safer.

10

u/spin_turnix 1d ago

I think my dad would be like this if the family wasn't already vegetarian.

22

u/Dependent-Wave-7939 1d ago

The caregivers we hired in China grew up without refrigerators. If they need meat they would buy it fresh on the day. However they would leave out leftover food like shrimp in humid 35C heat covered by a fly net. I don’t know how others handle it, I had the runs every time they did that.

Before fridges became widely available where she was, my grandma used to cover her milk and keep it in a cool cupboard (for, like, a day or two!) and then make yoghurt and buttermilk from it.

She from a sketchy part of Mexico, she grew up eating spoiled food. It doesn't hurt her. She at the entire tub of her concoction and it did nothing to her.

269

u/CaminanteNC 1d ago

My Mexican MIL will cook food in the morning and leave it on the range ALL DAY LONG. Scoop some out, microwave it. Scoop some out, microwave it. When she does put something in the fridge at the end of the day she won't put a lid on it. I had to completely reeducate my wife on food safety, which thankfully she readily adapted to.

176

u/RedditUser28947 1d ago

My sister's in laws are from Venezuela and whenever they stay with them she keeps a running tally in our group chat of all the servsafe infractions going on in their kitchen. Leaving pork on the counter at 8am because it's going to be cooked for dinner, prepping chicken then licking fingers, leaving a pot of soup out overnight, you name it. My sister constantly has to hit the drive thru on her way home from work to be able to tell them "oh sorry I already ate, you guys enjoy though"

41

u/Sage-lilac 1d ago

My MIL is like that too! I can’t do it tbh, i‘m a germaphobe, she practically NEVER washes her hands and has long acrylic nails. I can not eat anything she touches! On top of that she has never practiced any type of food safety, she’s running on vibes only with no knowledge. The other day she baked some bean stew and left it in the oven, while eating from it for days. Apparently it started smelling so bad that they were dismantling the kitchen cabinets to look for a decaying mouse!

28

u/RedditUser28947 1d ago

My mother is a bit like this. Grew up poor, so she won't ever throw food away, even when it smells off. She would buy cooked sliced ham in big portions (like 500-700g) and it would go slimy and sour smelling in the fridge all of the time. We were still expected to eat it. (We were not poor, my father is a doctor, she is a dentist).

Now I don't ever get sick from food, but not worth all the icky food I ate as a child/teenager.

It's sad to throw food away, but nobody deserves spoiled food.

My ex made some pork chops one time, and they looked barren as hell. I asked if she seasoned them, and she said no, they were already seasoned and smelled like it was a sweet dry rub. It wasn't. It was the smell of ammonia.

179

u/Zealousideal_Eye8277 1d ago

My mother in law leaves leftovers on the stove and in crock pots for 2-3 days sometimes and still expects people to eat it

64

u/Any_Conclusion_4297 1d ago

This blows my mind because I love to cook for friends and I am actively terrified of ever giving anyone food poisoning. Never mind the fact that I've never even given myself food poisoning, but the fear is still alive and thriving.

31

u/FlakingEverything 1d ago

I have a housemate that I'm not sure how he survived for so long. He'll defrost his frozen chicken in a pot of water for two days, cook that up, leave the cooked food on the stove for literally days afterwards while he slowly go through it all. Mind you, that was during freaking the heat wave in Europe.

15

u/proteacicada 21h ago

Bro… do we have the same mother-in-law? Mine is super “don’t throw anything away!” mentality, which is great… but like prepare the food closer to it’s expiration date. She watched the one documentary on how accurate expiration dates are and she now assumes that not a single expiration date is accurate and that she knows better. She has more than once cooked rancid meat and I’ve straight up just said “I’m not eating that.”

She lives with me, and I’m primarily the chef of the house. She goes on these “throw shit together that is expiring and hope for the best” dinners.

27

u/hahagato 1d ago

We do have the same MIL. I wasn’t allowed to throw away MOLDY, talking BLACK, vegetables. When we moved in we needed room to store our things so we cleared out her dried/canned goods space and was seething as we threw away multi-years passed expired foods.

She is known to be a “great cook” but I unfortunately am extremely wary every time I eat her food. She will start cooking for events days in advance and doesn’t often refrigerate the things once they’re ready! It’s especially egregious in the summer time because that kitchen will be 93’ degrees 24/7 for 4 straight months due to the location and complete lack of insulation.

She also doesn’t actually scrub food off of dishes when she “washes” the dishes either. So she will cook on old food.

I love this woman so much but omg, I just can’t do the food!!!!!

35

u/Zealousideal_Eye8277 1d ago

It sucks because her food is really tasty but she also has unsafe food handling practices so I only eat it if it's fresh lol. She also has an unofficial catering business, who knows if she's getting people sick or not.

u/dorkofthepolisci 1d ago

My mom doesn’t date any of her left overs, including rice or spaghetti

She will microwave the shit out of whatever is in her fridge. She must have an iron stomach, she’s 80 years old

The one silver lining is that she’s vegetarian, so there’s no risk of spoiled meat.

She used to can fruit and would never date any of that either, but it was never around for long

u/no-m0tivation 1d ago

I did in home care for a bariatric 80 y.o woman whose electric chair didn't fit in her kitchen. It seemed every other staff member had given up on cleaning the small kitchen space and her fridge and counters were overflowing with expired and spoiled food. I tried and tried every day to get her to throw things away, but she wouldn't. Cottage cheese that had been sitting on her bedside table for 2 days? "Put it back in the fridge, please." She'd order chili dogs and gravy fries and the paper takeout box would sit on the counter for another 2-3 days until she craved it and asked me to microwave it. Her kitchen always had bugs. The fridge smelled so bad and had whole bacterial ecosystems flourishing. I worked there until this past spring, and in my last week, I finally said "some of this has to be cleared out. Enough is enough." She wasn't happy, but I was throwing stuff out that was open and dated back to 2019!!!

If you pulled them out of a vacpac; they often smell spoiled until they air out a bit, and sometimes the juices in the bag never smell right. It can stink up the whole kitchen even though the meat is still good to eat.

It’s the result of “wet aging”, which is just what they named the resulting effects of vacuum packing meat for longer shelf-life. In the pack, enzymes break down meat and tenderize it, but this creates the off smells that often accompany spoilage (if the meat weren’t sealed it would spoil by this stage). These build up in the bag and get released all at once when you open it. The meat itself will end up holding that flavor after some time but usually it’s just in the bag and it goes away after a couple minutes. I will rinse and dry meat if it retains the smell and it usually helps.

378

u/Recent_Visit_3728 1d ago

Thank you.

I used to work in kitchens and we smoked/roasted a lot of pork butt. Cracking them open always smelled terrible and sour, no matter what. Straight off the truck, pack after pack, different suppliers.

Pork hanging out in plastic bags with its own liquids just smells bad.

36

u/lappyg55v 20h ago

I used to work in a deli, opening most meats you were met with a terrible smell, ham was the worst. But they were fine, it was just the packaging.

40

u/Odd_Communication144 1d ago

the same way i check if a bottle top cracks, i always watch to see the way a vacuum packed bag reacts when i puncture it intially. Thats the nice part before the farts seep out of the bag

That smell she is describing is common with pork that is vacuum sealed. It smells bad for like 20-30 min and will clear out. I've nearly thrown some out fresh after opening but if you give it 5 min or so it becomes neutral smelling again sometimes

u/tortapounder14 1d ago

Lamb is also pretty bad, beef it happens with the ones that come sealed but not as bad as the other animals

99

u/Averagely_Humble 1d ago

What about chicken? Sometimes Kirkland brand chicken I get from Costco smells off but now I’m wondering if I’ve just been tossing perfectly fine chicken. It’s vacuum sealed with juices.

203

u/HawksNStuff 1d ago

If you aren't sure if chicken has gone bad, it hasn't.

You will fucking know. I promise you that. Worked at a place that had fried chicken in high school. Someone told me that, I would bread the chicken for prep in the morning. I went probably a year, then opened up a bag and got hit in the face with the kind of rank you never forget.

I immediately said, “This smells like baloney.” He laughed and didn’t believe me, but then he smelled it. BALONEY BRAS!

Yes, sulfur smells are normal in vacuum sealed pork

Start getting nervous if meat smells like yogurt, or if the unpleasant fart smell lingers longer than a few minutes when wrap has been opened. That is a hard no.

And pork can be bad without a bad smell. I’ve been very sick from roasted ham that sat in the fridge for a few too many days but smelled fine.

24

u/memymomeddit 1d ago

I run into that all the time, but I've also had it still smell bad after airing out in the fridge overnight. Same deal as OP - within the expiry date and opened the day it was bought.

It just happens sometimes.

18

Chicken does this too if wrapped a certain way. Throw away the packaging and let the meat air out for like 5-15 mins and then smell it again.

Pork always smells bad to me. Like it's starting to go off every time. Even cooked pork smells off. However I recently smelled actually actually gone off pork and the smell was far more intense than the usual smell I get from regular pork.

50

u/Oops_All_Bans 1d ago

When I was visiting friends in Texas we drove past a pork processing plant. That shit smelled absolutely putrid. And the stench stuck with us for a bit too.

I thought I was weird for thinking that pork always smelled off to me! It’s why I never cook pork. Glad others have the same reaction

u/gettin-hot-in-here 1d ago

That's my approach. If the sticker from a store says it's too old, I'll eat it. If the nose says it's too old? Absolutely not

311

u/chunkyvomitsoup 1d ago

Exactly. Especially since perishables are so susceptible to logistics issues. Meat can be freshly packaged today, but if someone, somewhere, at some point had mistakenly left it out in the heat for a couple of hours then that sticker won’t do you any good

125

u/Head_Razzmatazz7174 1d ago

Considering how many times I've seen fresh meat sitting on random shelves in a store, that tracks. Many customers really have no idea about the cold chain.

80

u/potatobwown 1d ago

That and the ones who leave it on a random shelf for employees to back are inconsiderate and lazy.

Duroc pork always smells bad to me. I’ve bought, open, smelled, and thrown away 2-3 times, just to be on the safe side. I eventually figured out that’s just the way it smells before it’s cooked. last time I got it, it smelled weird still but I cooked it, ate it, and still alive.

9

u/squash-n-flop 1d ago

I always let meat sit out for a second before doing a smell test, all meat smells funky to me right out of the package. Something with the gases and or preservatives they use I think.

12

u/feldoneq2wire 1d ago

When you first open Cryo it can smell pretty farty but let the meat sit out unwrapped for 5 minutes and it should have little to no odor.

u/slimribbons 1d ago

I have a good nose. I can pinpoint scents so well. However for some reason, my brain does not register danger when something food-related smells off. If it looks off, yes I’ll toss. But if it just smells bad, my brain thinks nothing of it. I’ve spit many things out once I realize it doesn’t taste “normal”. I was good poisned too much as a kid. Frankly, I have an amazing digestive system, because idk how I survived all that as a child. Now, if I can’t remember when I made it, I toss it. Better safe than sorry

17

Not saying it’s not spoiled but if you removed it from the plastic there is an odor. You can rinse it and then pat dry. This should remove the odor.
I don’t recall that odor smelling like fish but it can be it can be offsetting and definitely weird if you don’t work with package meats often.

198

u/MooseyTuesday 1d ago

It may not be spoiled. The meat itself looks fine.

Pork is somewhat notorious for having its odor effected by the diet it consumed leading up to slaughter. Sometimes, commercial pork is fed fishmeal and a resulting "fishy" smell is fairly common.

57

u/CrazyCatLushie 1d ago

Sulphur is also a common smell on pork, especially if it’s in cryovac packaging. Smells like rotten eggs when opened regardless of how fresh it is.

100% this it looked fine to me. When my boyfriend and I moved in together I was finally able to drink milk again. Why couldn't I before? Because milk smells spoiled to me from the moment I open it. I have been too afraid to drink milk past two days because I cannot tell if it is spoiled until it's basically chunky. So she might just have a wonky nose like me.

If it's within date it's probably a bit of pork funk. Spoiled food smells like death. No way she'd done those extra steps if it was truly spoiled.

With ribs, you cook the hell out of them too. 200-210f is the standard temp you cook ribs to, so that is a bit of extra security.

Ever since I got food poisoning by meat I “could have sworn smelled a little weird, but maybe I’m just imagining things” I always give it a sniff test before cooking. The meat I got sick from was new from the store and within the sell by date and it was still off. Your nose knows. If it smells off, toss it!

18

u/Electronic_Tackle436 19h ago

100%. It's not worth taking the chance.

17

u/Lensgoggler 13h ago

People are way too reliant on the dates. You can't ever be sure something hasn't been iffy in the process. I ALWAYS sniff everyhing. I guess there are ways to bypass the "slightly off" thing as refridgeration is kinda new in the grand scheme of things but I do not take any risks. Smell smell smell!

The only spoiled thing I see is how spoiled you must be to throw out all those trimmings!

30

u/gossamerfae 1d ago

It's possible someone beforehand took it out of the cold section and left it somewhere lying around in the store before it was put back, instead of being thrown away for safety reasons. One of my coworkers went to walmart and found bologna inside a shoe in the shoe section for some reason??? And when he told a worker about it she just put it back in the meat section, instead of tossing it since there's no way to know if it was sitting there for hours or longer outside of refrigeration. He also saw milk in a random non-food section of the store but idk if an employee also put that back in the fridge or threw it out

11

u/st-shenanigans 1d ago

That being said, every pack of store-bought ribs I've ever bought have always smelled a bit off. Not run for the hills off, but definitely not a great smell. Usually fades after I salt the meat and let it come to room temp, though. Fresh cuts from my butcher don't have the same problem, so I think it's something to do with the packaging process. Idk.

I worked for a professional transport company who always gave out a ham from local butchers for Xmas. 1 year was the last I ever accepted it. We all got our hams, and rather than work transporting, etc, they sent us to the butcher. I took mine home and opened it without inspection of packaging. When I went to the butcher, I asked for the full leg of ham, he brought it to me and said $74.??, I said no, its the ham supplied by work and told him where I was from. He told his offsides to go get 1 of the hams from the ... batch and brought it out. It was almost $100 and I thought awesome. Got it home, opened it and it was rank as f. I then looked at the packaging and use by was 7 weeks prior. I took it back and told the butcher, who said it was still fine. I then drove to work and handed it to the manager. He took 1 whiff and told me to get the f in thing out of the building. Suffice to say, they never ordered from them again. 6 months later, they closed down.

A friend's mother is notorious for not throwing food out. She'll happily eat around the mould on cheese or bread. And she wonders why she had severe pancreatitis earlier this year...

When we last visited, her daughter asked for a bag of crisps (chips for the americans) and was given a bag of Wotsits (think cheetos) that were 3 years expired. They had changed from yellow to white in the bag, and were rock solid

I tried this once. I forgot I had ribs in the fridge for a month and, despite the awful smell, I thought I could maybe salvage them with an overwhelming amount seasoning and sauces.

Before I cooked them they smelled like rotten meat. After I cooked them, they smelled like honey bbq rotten meat. You can't salvage spoiled meat.
