or anyone who's familiar with breadcrumbs. I want to try making ube pandesal and the recipe calls for the dough to be covered in breadcrumbs, but I'm not familiar with this type of breadcrumbs. From what I can tell from these pics the breadcrumbs look very fine, almost like a fine cornmeal or semolina flour? where I'm from, I've only ever seen panko breadcrumbs which is coarser in texture than the ones in these pics. Can I just use panko and run it through the food processor to get a finer texture? Or maybe make my own breadcrumbs? I do have some sourdough end pieces in the freezer but I'm afraid the sour taste will ruin the overall taste of the pandesal. TIA!

Recipe Included Super proud of my mini pumpkin cheesecakes and homemade caramel!

This was my first time making cheesecake of any kind and I was really happy with how they turned out. Homemade salted caramel, pumpkin cheesecake, and a spiced graham cracker crust.
(Ignore the sliding caramel, I couldn’t wait to eat them lol)

Edit: I used a slightly modified version of queen Sally’s recipe! I only had 8oz of cream cheese on hand so I scaled down the other filling ingredients by eyeballing it.

For the salted caramel I followed the exact recipe in the link.

For the crust, I didn’t measure it exactly, but I used one package of graham cracker sheets (9 sheets), added butter and sugar until it was sandy, then allspice, Ceylon cinnamon, and ginger until it tasted good.

Today was a perfect chocolate chip cookie baking day. I used the recipe from Pinch of Yum but made a few changes. I used bread flour instead of AP flour, measured them to 60 grams, some of them 70, and baked at 325 for 16 minutes, 18 for the 70g ones. Oh and I put extra chocolate chips on top and chilled the dough for a bit before baking them.

The ghost is made out of a coconut ‘veil’ which I made too thick so it didn’t drape over mango cubes properly so I just turned it into small discs instead 🙃

Unfortunately Reddit has dulled the colour quality in the photos :((

Recipe Included Browned butter, toasted, vanilla vanilla rice krispie treats

This is something I've developed just based on advice over the years.

125g butter

180g rice krispie cereal

380g marshmallows (I used vanilla)

Vanilla extract (measure with your heart)

Pinch of salt

You can double the recipe.

Toast your cereal: I did it at 200c for 5 minutes with a stir midway through. I split it into two dishes (including the one I made the treats in) so it bakes evenly. This will intensify the flavour

Brown your butter: do it over medium low heat until it bubbles and you can see the fat solids turning brown. It will smell caramelized and nutty. Use your nose. I add the salt at this point.

Melt your marshmallows: I added the vanilla powder and paste towards the end when it was mostly liquified. I then threw in the cereal and mixed until incorporated.

Baking spray is your friend. Also it's easier to have a friend hold the pot while you scrape the mixture into the glass baking tray (I exclusively use metal for everything else but this is an exception). Use a piece of parchment to lightly pack it in.

Do not smush it down too much and do not refrigerated! Keep in an airtight tub or covered with plastic wrap.

Use hot soapy water on the sticky clean up. Fill the pot and walk away. Throw all your utensils in too. I highly recommend a stiff silicone spatula.

They're also fun to decorate if you'd like. Or you can add things or drizzle with chocolate. I'm very tempted to make a batch with toasted coconut. This had vanilla marshmallows and vanilla powder. I also added a drop of vanilla paste so it's actually "vanilla vanilla vanilla".

Anyway, hope you enjoy!

I decided to face the pastry/bread I've been meaning to try baking. It's been in my mind for weeks and I finally give it a go. I used Claire's Croissants recipe from NYT Cooking. Had some bumps with tearing and butter leaks but I was able to still bake them. I present to you... my big ass Croissants 🥐🥐🥐

Wanted to do something cute for the kids for Halloween. These are my practice cupcakes. 😄 which one’s your favourite? ❤️

Equipment:
Cupcake liners: Bake Choice! I’ve gotten a lot of stuff from them but I highly recommend these. They’re lightweight, yet sturdy and release from the pan so cleanly and easily.

Cupcake Flavour: Chocolate banana cupcakes
Tarantula: chocolate frosting and almond Pocky sticks for legs
Ghost: cream cheese frosting and chocolate details
Black cat: black chocolate frosting, Oreo ears, white chocolate eyes and whiskers
Tombstone: chocolate frosting, “moss” graham cracker crumble (graham cracker crust mixed with green food colouring, baked till crisp then crushed again), white chocolate tombstone

Showcase (No-Recipe) Ugly cinammon rolls. Nothing that some icing cannot fix

First time making cinnamon rolls. They grew up too much in the oven so they were a bit ugly. I think the icing helps covering these mistakes lol. I probably should have leave it rising a bit more.

EDIT: It was an obvious joke. There is no such thing as an ugly cinnamon roll, and I love them being different and not all looking the same. But I used to work as a pastry chef and everything had to always look the same. I hated it a bit :D

I picked up a baking pan at the library and used ChatGPT to help me make a recipe that would work and consult with on modifications- for the actually cake base & buttercream since I was trying to make something that would work well for a Slavic dessert table without being overly sweet like a lot of American recipes are. This ended up being a half drunken cherries/half sour cherries vanilla cake with buttercream frosting. I’m not sure how it tastes yet but I’m super proud of how it looks since I’m not a frosting expert! Although the eyes are wild they don’t look as bad when you look at it from an angle 🤣
