There is a tiny vegetarian Indian food store bear where I live, seems odd as we don't have many Indian people locally but great to have...but, I don't shop there enough to support them or benefit. That's a shame. Any suggestions for what I might want to look out for to buy in there, snacks etc?

Hello guys, I am a foodie and an Indian. Recently, I went abroad for a trip, and it got me thinking. Out of curiosity, I tasted Indian food abroad; most of it was good(a little milder, but still). But I found that most of this food had a broader 'Indian' categorisation. I understand the need for it, but it felt like it simply became a jack of all dishes, while not being perfect in any. The only ethnic food restaurants I saw individually were Punjabi and Tamil. And they happened to also be the best. It is in my opinion, when restaurants specialise in one thing, the food is usually better.

Hey yall, im a dumb American but really like this dish i got but i really like “Indian chicken curry” but i recently found out that curry isnt actually a thing for you guys. This dish is a comfort food of mine (autistic) but I was curious if this is an actual dish and you guys have a different name for it or if it isnt a dish at all and just something here in America.

Many of the ingredients we use today came from outside the country, Things like potatoes, tomatoes, green chillies and even red chillies. A lot of our recipes include these things today.

But the thing is, being a North Indian myself, WTF is curry? I've never had it in my life. Neither have I ever heard of it.

I want to level up my sabut masoor daal and open to any ideas!!

My usual way is just boil the daal with some turmeric, salt, red chilli powder, green chillies and some garlic.

Once daal is done, make a tarka.

Simple tarka - garlic cooked in ghee maybe with some hing and cumin seeds and add to daal with dhania

Or

Add onions and garlic to ghee, cook until browned, add cumin seeds, hing, fresh dhania and then add to the daal.

Sometimes I add a few tbsp of shaan daal masala.

Its comes out OK but doesnt taste like wow

I feel like nothing beats open flame myself. Microwaving is a travesty with how fluffy they get. Would be nice to dial in air frying

Note:- My question was about foods that haven't undergone any significant transformation from their country of origin not foods such as biryani which other than the word has very little similarity to the Persian biryani.

I get Indian takeout about once a month and sometimes the heat level is too mild. What condiments (or anything else) are appropriate for adding to Indian food to make it hotter? I know what to use for Thai food, Mexican food etc but not for Indian.

asking in general, not about one recipe. for a plain everyday dal, which one change gives the most improvement for the least effort? things like the type of fat, when you add the hing, how dark you let the garlic go, finishing with lemon or kokum. curious what people here swear by and what's just hype.

I want to attempt a basic byrani at home. I can use chicken, or leg of lamb (Costco !). My preference is lamb. I have multiple markets near me and can get probably any authentic ingredients I need. Unfortunately I have no basis of judging the quality of recipes though. For instance I notice this one is leaving out the chilis, so I'm afraid it's very Americanized. I'm used to some sliced incredibly not chili's that have a distinct flavor, like we ordered mild once and it didn't taste good. One of the restaurants we get from the most often even has what looks like tiny slivers of carrots in it. It all seems very ornamental and this one seems kind of plain other than the onions.

Can anyone suggest dips that I can have with air-fried chicken? I am looking for something spicy and garlic(y) if that makes sense. Homemade dips also works as long as it meets the aforementioned criteria

Not everything, obviously, but certain curries and gravies taste better after sitting in the fridge overnight. The flavour seems more settled when you reheat them.

I've noticed this especially with dishes that have a lot of spices. Freshly made is great, but the next day's lunch can be even better.

What food do you genuinely prefer eating the next day?

Winters are almost here, so thought of sharing one of my favourite winter desserts. Gajar ka halwa is something I never miss. I remember watching my mom make a big batch at home during winters and the smell of carrots cooking with ghee would fill the whole kitchen. Now I make it myself whenever I crave something sweet and warm.

Here's how I make it at home:

- First, wash, peel and grate around 1 kg of carrots

- Heat 3-4 tbsp of ghee in a kadhai. I'm using Whyte farms ghee here

- Add the grated carrots and cook them on medium flame for a few minutes, stirring occasionally.

- Now add around 2 cups of milk (i use full cream) and let the carrots cook until they become soft and the milk is mostly absorbed. Keep stirring in between

- Add sugar according to your taste and cook for a few more minutes until the mixture thickens.

- Add some cardamom powder and dry fruits of your choice. I've added almonds and cashews from tulsi. Mix everything well.

- Cook for another few minutes until the halwa reaches the consistency you like.

And that's it. Serve it hot and enjoy. I personally love it when it's soft, cooked in ghee and garnished with dryfruits
