The reason I make soup at home is a food that is eaten over days. Most days it tastes better like day 3 or 4. Fresh and soup is a weird desire.

100% on it tasting better after a few days.

My “signature” dish among friends and family is a gumbo that I do a pretty good job at making. And it consistently tastes the best after one or two days in the fridge

Pulled pork is another one that's better on day 2, the smoke has more of a presence.

When I was in culinary school at the Culinary Institute of America in 1995 the soup at St. Andrews Restaurant was prepared and rapidly chilled then portioned. When an order came in it was microwaved and garnished. Soup sitting on a bain Marie all day is drastically less nutritious than the previously mentioned method. Most of the restaurants since then, that I have worked, have had the soup sitting cold without any pasta or starch and reheated per portion with the starch and garnish added to order.

Dude so right. It takes a while but you make a batch that makes like 10 servings and last for a bit. And it does taste better after a couple days

Soup is so versatile. My favorite type of food, well.....maybe sushi is tied.
